The origin of our stoves
Our traditional cuisine admits innovation and `signature cuisine´ wherever it is feasible, but never with a fabe dish – either the traditional fabada or `fabes with clams´- our honeyed rice dishes, Asturian tripe or our incomparable `Mexican dishes´, as a tribute to our ancestors who built a bridge between Asturias and America.
Some of our elaborations are mythical in Villa de Llanes, such as the `Tuna´s roll´ or the homemade `fish pudding´,the `Hake loins with cider´ or our `Cantabrian squid´; the `Escalopines´ of Asturian beef sirloin with Tío Pepe or the `Pitu de caleya´ (free-range chicken).Without forgetting our `Cachopo de Ternera´made with Asturian Beef born and raised in the green Asturian montains. In desserts, it is inevitable not to taste a `Rice pudding´ like the ones our grandmothers made or to one of our homemade almond, apple, blue cheese cakes …
The origin of our cuisine is thanks to the great Asturian gastronomy, to our old great kitchens or “llares”, to our grandmothers and mums… .but here also it is thanks to Ángel Fernández. He has taught us the true Asturian cuisine, he has left his mark on us in our restaurant and he has given his legacy – after so long in command – to the person who has worked side by side, day by day for so many years with him. Tomás, who throughout his journey in our restaurant has been imbued with the essence of that cuisine, will continue with the tradition of our stews, our stews and all our elaborations already known throughout the Council.
